Sustainability

Our commitment to sustainability

Sustainability is core to the way that we cook, source ingredients, and run our business. Here’s what it looks like in practice:

Using an electric van. In 2019, before electric vehicle infrastructure in Rome was where it is today, we invested in an electric delivery van. Purchasing this van was supported in part by a community crowdfunding campaign. It lets us travel across the city, including areas where conventional vehicles are restricted, while keeping our carbon footprint low.

Recycling our cooking oil. We collect our used cooking oil and save it. On a regular basis, a company picks up the oil, cleans it, and brings us clean oil in return. We consider this a small but meaningful closed loop.

Using compostable and/or recyclable packaging. We eliminated single-use plastic cutlery and takeaway packaging back in 2019. Delivery orders use entirely compostable containers and cutlery while catering events use a combination of recyclable and compostable packaging.

Serving water sustainably. At the restaurant, we use an in-house filtered water system and refill our own glass bottles. Our sparkling water also comes in reusable bottles collected and replaced on a regular cycle. Additionally, at our bistro, we serve water in aluminium cans rather than plastic or glass. This is a more expensive choice, but the right one.

Limiting the portions we produce for our daily specials. This isn’t just about making each dish feel special, but it means that we only buy what we need and reduce waste.

Sourcing produce from local suppliers. We source our fresh produce from local suppliers- the vegetable shop from around the corner- and avoid supermarkets whenever we can. We do this to support small businesses and cook with whatever is thriving locally at that time of the year. When ingredients we need aren’t available in Italy, we source from Syria first, then Lebanon, and then further away only when necessary.

Choosing Gaza Cola. We stopped serving Coca-Cola around a year ago, switching to Gaza Cola. This was a conscious political choice and an act of solidarity with the people of Gaza.

Following recycling regulations. We follow all Italian recycling regulations and welcome the accountability that comes with regular checks.
